Trio Plant-BasedTop Vegetarian Restaurants in Minneapolis

Trio Plant-Based became the first vegan restaurant owned by someone of color. From being wrongfully arrested and unfairly charged to fighting and supporting the black community. Louis Hunter was present at the Philando Castle protest in 2016. Protesters demanded answers and justice as riots broke out. One of the demonstrators charged with hurling rocks at police officers was Louis. If found guilty of the charges, Louis would have to serve 20 years in jail.

Louis fought the allegations for more than a year. With the aid of a couple he met while demonstrating, the charges were finally dropped in August 2017. Dan and Sarah Woodcock organized a protest and circulated petitions to support his innocence. Both the Woodcocks and Hunter made the decision to operate pop-up restaurants serving the neighborhood’s wholesome fare. They consistently sold out of their pop-up events. They made the choice to create something more lasting out of these pop-ups.

Once more, the neighborhood joined together to support Louis, but this time they supported the realization of his goal rather than helping him defend his innocence. 2018 saw Trio’s conception. For Louis and the Woodcocks to launch and open their business, the community contributed more than $50,000. In 2019, Louis took over Trio alone as things began to develop quickly. Trio Plant-Based became Minneapolis, Minnesota’s first vegan restaurant owned by a person of color.

Advellum Vegetable Eatery was established in the summer of 2020 by chef Michael Shaughnessy and his wife and business partner, Viorica Shaughnessy. Michael and Viorica have gathered a wealth of expertise in the hospitality sector since they first met while working in the restaurant business. The fulfillment of Michael’s passion for attentively and compassionately preparing veggies is Advellum Vegetable Eatery.

The Malcolm Yards Food Hall in Southeast Minneapolis is where the headquarters are located. The name Advellum is a combination of the Latin words “adventum” and “elementum,” which mean “adventure” and “element,” respectively, and are the two cornerstones of Michael’s cooking. The ownership group of the Market at Malcolm Yards approached Michael and Viorica in the fall of 2020 about joining the group of chefs and businesspeople who would be the market’s inaugural team. Both parties realized this cooperation was worthwhile pursuing after multiple tastings and meetings.

Michael and Viorica agreed to be a part of the opening team after learning more about the collective goal of the people behind The Market at Malcolm Yards. The choice to join the food hall movement with this incredibly creative group was influenced by small enterprises’ sincere sense of community, curiosity, and cooperation.
