On the island of Oahu, the first five “retail spirit” licenses were obtained in the early 1860s. The only license still in existence is Murphy’s. WL Green was the first proprietor of Murphy’s when it was still known as the Royal Hotel. In the ever-changing waterfront environment over the years, from the monarchy to the republic, to annexation, and finally to territorial status, the structure stayed the same.

Don Murphy later bought the Royal Hawaiian Saloon and opened Murphy’s Bar and Grill in 1987. They’ve been serving up a taste of Irish culture to patrons since 1987, accompanied by excellent food, enjoyable company, and a large bar with 16 different beers on tap. Fat Cheeks serve a variety of rolls, soups, salads, sides, and desserts. Fundamentally, Fat Cheeks Hawaii is just a small, family-run business. a combination of tastes from the past, hopefully in a way that is recognizable and approachable for everyone. They founded Fat Cheeks in order to live the dream of owning their own restaurant in Hawaii. They love to cook, so when people enjoy the cuisine they serve, it makes them extremely pleased. Chef Jared Brown was born and raised in East Harlem in New York City. He earned his official training in cooking at Johnson and Wales University in Rhode Island.

In his first year, circumstances and a desire led him to look for work at the original Megu in New York City. After spending some time rising through the ranks, Megu opened its second site. After taking some time off, he launched his company, La Fine Bouche, and began offering private dining and catering services. A few years later, he was hired as a member of the restaurant’s opening team. He and his fiancée started The Fat Elephant, a pop-up dinner series, in the spring of 2017 in Hell’s Kitchen, New York.
