Giovanni’s Shrimp
Giovanni’s Shrimp started the business without much more than a few fantastic shrimp recipes and an enterprising drive out of a 1953 bread truck conversion. They traveled the North Shore in their beloved truck, stopping for a few hours at each location to offer what they believed to be some very unique food—it turned out that they only had shrimp trucks in the area. As word of the tasty shrimp spread among the locals, people took note.
In 1996, they made the decision to leave the truck parked at 56-505 Kamehameha Highway in the charming, storied village of Kahuku. At 66-472 Kamehameha Highway in Haleiwa town, which at the time was an overgrown, marshy field, they opened a second truck in 1997. That land wasn’t desired back then, yet it is now one of Haleiwa’s busiest areas. The name “Across the Street from McDonald’s” will always be associated with their truck there.

Chubbies Burgers started offering its straightforward menu of burgers and fries in the summer of 2016. You could locate their food truck anywhere in Honolulu because it was mobile. The Brewseum, where they served their food alongside regional craft beers, the Eat the Street food truck festival, staying up late to feed ravenous Pokemon-Go players in Kakaako, and Sandy’s, where they oceanfront, is all fond experiences for them.
The objective was to present a burger deserving of the title “classic” with no frills or processed trash. Simple and constrained, but reliable and handcrafted. Eventually, a week’s worth of hundreds of hamburgers became thousands.
