b. patisserie brings San Francisco an elegant, yet contemporary, salon de thé with an open pastry kitchen, signifying the combination of Belinda Leong’s talent with Michel Suas’s wisdom and expertise. The menu is composed of modern French-style pastries along with American flavors and local impact. Schubert’s Bakery is serving the highest quality crafted cakes since 1911. Oswald R. Schubert is a German immigrant who came to San Francisco and began baking in a small space situated on Fillmore St. it was soon flourishing and he required more space to keep up with demand. In the 1940s he moved to their current location on Clement St.

Growing older, Oswald decided to retire and sold the shop to another baker named Fred. Fred continued the artisanal baking methods that he had used since founding the shop and also added some new products to the already tremendous selection. The current owners, Lutz and Ralph Wenzel purchased the business in 1995.

Wenzel Brothers are the fourth-generation bakers from Germany and bring together old-world techniques and modern-day technology, with delicious outcomes. Some of the favorites from 1911, including the Opera and Neopolitan cake are still being baked by popular demand to this day.
