Many days were spent waiting for customers to come in to sample the Puerto Vallarta flavors that Maria had to offer. As the business evolved, she was joined by her son Alex, who started as a dishwasher, and subsequently, her daughter Larissa, who assisted with seating and check-out. La Costa had outgrown its humble origins and moved to The Ice House, a structure three times the size of the old, after 21 years in the same site and utilizing every square inch of space.
