KOVAL Distillery
KOVAL Distillery creates natural whiskey, liqueurs, and specialized spirits, founded in 2008, and Chicago’s first distillery since the mid-1800s. The owners Robert and Sonat Birnecker decided to abandon their academic profession to bring the distilling traditions of Robert’s Austrian family to America. Rhine Hall Distillery
Rhine Hall Distillery is owned by Charlie and Jenny, a father-daughter team. Their exceptional recipe and process were developed by Charlie and Stan the Man with help from experts on both sides of the Atlantic. Rheinhalle was the name of the ice rink in Austria where co-founder Charlie played professional hockey and inspired the name for Rhine Hall Distillery. At Rhine Hall, they focus on fruit brandies, a European-style brandy otherwise known as eau de vie or schnapps.
They start with fresh fruit before they chop, ferment, distill, and bottle their spirits. The majority of their fruit is sourced from the Great Lakes Region, and no flavorings, sweeteners, or neutral spirits are added to any of the brandies, each bottle contains roughly 25lbs of fruit. This process gives them a product that is not sweet but embodies the essence of the fruit in both taste and aroma.

Chicago Distilling Company is a women-owned and family managed Craft Distillery in the center of the Logan Square area of Chicago. The motivation came in the fashion of moonshining ancestors in the backwoods of Wisconsin and in 2013 the first spirits were distilled in Logan Square. Their portfolio has grown to include many award-winning spirits and ready to drink canned cocktails. Wild Blossom Meadery & Winery
Wild Blossom Meadery & Winery has been a Chicago’s auxiliary in producing wine and mead using domestically produced ingredients for more than two decades. The meads produced at Wild Blossom Meadery & Winery are one of the most ecologically produced beverages in the world. With more than 30 years of winemaking experience, Wild Blossom Meadery & Winery is the prime winery in Chicago and the sole producer of mead on the Northern Illinois Wine Trail.
Being a mead producer, at Wild Blossom Meadery & Winery they raise their own bees and collect their own honey. Each bottle they produce generates a ripple effect of certain change as for each bottle produced, their bees pollinate some 2 million flowers.
