EDWINS Leadership & Restaurant Institute
EDWINS Leadership & Restaurant Institute is an organization that gives heretofore incarcerated adults a foundation in the culinary and hospitality industries, and a support network essential for long-term success. Situated in Cleveland, Ohio, and founded by Brandon Chrostowski in 2007, the driving belief behind the organization is that every human being, regardless of their past, has a right to a fair and equal future. In 2011, Culinary Club classes started at Grafton Correctional Institution, and shortly after, EDWINS Restaurant started in Shaker Square on Nov. 1, 2013.
Today, EDWINS has matured to include an award-winning fine French restaurant, Butcher Shop, Bakery, and Edwins too; a culinary incubator, community kitchen, event, and makers’ space. The Institute graduates 100 students a year and has acquired employment in dining establishments throughout the country.

L’Albatros
L’Albatros, set in an old wagon house on the campus of Case Western Reserve University, L’Albatros features a beautifully developed French brasserie fare in a quaint and romantic setting. More than 30 years ago, Cleveland Magazine accredited chef and restaurateur Zack Bruell with introducing the area to a developing west-coast trend of bistro dining and fusion cuisine. Bruell brought the idea from his work with famed chef Michael McCarty of the landmark eatery, Michael’s Santa Monica—a restaurant acknowledged for influencing dining outlook throughout North America with its California nouvelle cuisine.
