If they run out, they make them on the fly. Frequently, customers are eating things they made just a few hours prior.
During the first weeks, they were open, they found that they kept running out of stock on certain items and either have to reject the order or increase the wait time. For the sake of keeping the great, fresh texture and taste, they try to only make as much as they expect will sell out.
