Love at First Bite was founded in 1992 by the Walker family, who soon started attending food festivals across the nation. In 2001, they started selling the Cochon de Lait Poboy at Jazz Fest in New Orleans. Walker’s Southern Style BBQ started in eastern New Orleans 11 months before Hurricane Katrina struck. Walker’s quickly reopened after rebuilding alongside the rest of the New Orleans and Gulf Coast region.
